Jerk seasoning principally relies on two items: allspice (called the "pimento" in Jamaica) and Scotch bonnet peppers. Other ingredients may include cloves, cinnamon, scallions, nutmeg, thyme, garlic, brown sugar, ginger, and salt.

| Easy to make Jamaican Jerk Marinade |
Ingredients
- 1/4 lb green onions (4 or 5 small bundles)
- 3 tablespoons minced garlic
- 1 lemon
- 1 Jalepeno
- Tbsp Brown Sugar
- 1 tablespoon Chinese five spice
- 2 tbsp Crushed Red Pepper Flakes
- 1 large Red Pepper
- 1 cup olive or coconut oil or Whatever you have
- Salt to taste
- I wanted to grill green onions to add a bit depth of flavor but really up to you.
- Add all ingredients into a food processor or blender and slowly add oil until you reach the "pesto" nice like consistency
- Refrigerate for at least 4 hours to let flavors blend. The longer it sits the better it gets!
- Note * You can use Hot peppers you prefer, scotch bonnet traditional but I had Jalepenos at hand. It's all personal preference
